We love Easter - the super long weekend, chocolatey goodness and spending time together as a family. We decided many Easters ago to limit the number of chocolate and Easter eggs and instead let the kids choose one Easter egg each. This was a result of one year the kids getting so many Easter gifts from so many people it was ridiculous. We ended up letting them choose a few and took bag loads to the City Mission to share.

We will be doing a bit of baking over Easter - could not resist this simple Easter fridge slice, it reminds me of my favourite slice growing up. Let me know what you think if you make it!
Easter Fridge Slice
- 395 gm can sweetened condensed milk
- 100 gm chopped butter
- 150 gm chopped dark chocolate
- 2 Tablespoons cocoa
- 200 gm pack Tiny Teddy biscuits (or similiar)
- 100 gm mini chocolate chip cookies
- 1 cup coarsely chopped marshmallows
- 50 gm small Cadbury oreo easter eggs
- 1/4 cup speckled eggs
- 100's & 1000's to decorate
Grease and line the base and sides of a 16cm x 26cm slice pan, allowing the sides to overhang.
Combine the condensed milk, butter, chocolate and cocoa powder in a saucepan over medium-low heat. Stir for 2-3 mins or until chocolate and butter melt and mixture is smooth. Set aside for 5 mins to cool slightly.
Meanwhile, reserve 12 Tiny Teddy biscuits and 5 chocolate chip biscuits. Chop remaining combined biscuits and place in a bowl with the marshmallow. (Hint to cut marshmallows easily use scissors and dip in a bowl of warm water prior to cutting each marshmallow or very lightly coat the scissors in oil)
Pour the chocolate mixture over the biscuit mixture and gently stir with a metal spoon until just combined. Spoon into the prepared pan and smooth the surface. Sprinkle with the reserved biscuits, Easter eggs and 100’s & 1000’s. Cover with plastic wrap. Place in fridge for 2 hours or until firm. Cut into pieces.
